Zucchini Chips





I'm finally emerging from the library today! After our trip to the mountains, I had one last exam that was part of that makeup test that I've been talking about since December...trust me, if you're sick of hearing about it imagine how I feel. But I'm done and it went really well! This morning I stopped at the Farmer's Market which is usually a weekly trip, but we've been away the past few weekends so it's been a while. I picked up some zucchini and made one of my favorite snacks - zucchini chips! These are so quick and easy to make - perfect for lunches in med school. Plus they don't taste like veggies which is exactly what I need to convince my veggie-hating husband to have a few. Simply slice up a small zucchini (large ones aren't as tender), dip them in oil, bread them with seasoned bread crumbs, and fry them in a pan. It's that easy and incredibly yummy. Enjoy!

  1. I'm all for healthy, tasty, simple recipes. How long can they be stored after you make them?...and I'm glad the exam went well!

    1. Same here! I would only store them for a few days, but honestly they don't usually last long enough around here for me to say for sure!
