I'm finally emerging from the library today! After our trip to the mountains, I had one last exam that was part of that makeup test that I've been talking about since December...trust me, if you're sick of hearing about it imagine how I feel. But I'm done and it went really well! This morning I stopped at the Farmer's Market which is usually a weekly trip, but we've been away the past few weekends so it's been a while. I picked up some zucchini and made one of my favorite snacks - zucchini chips! These are so quick and easy to make - perfect for lunches in med school. Plus they don't taste like veggies which is exactly what I need to convince my veggie-hating husband to have a few. Simply slice up a small zucchini (large ones aren't as tender), dip them in oil, bread them with seasoned bread crumbs, and fry them in a pan. It's that easy and incredibly yummy. Enjoy!
I'm all for healthy, tasty, simple recipes. How long can they be stored after you make them?...and I'm glad the exam went well!
